Following fifteen years of working as a chef in both New York and the UK, Spasia started her business Mystic Borek in 2020, selling filo pastry pies for home delivery around London and hosting sell-out events cooking contemporary Balkan food. Born in Sussex to Macedonian parents, her fascination and determination to celebrate her heritage knows no bounds and has gained popularity with both her customers and the press alike. She pulls inspiration from her ancestors, her experience in the food industry and most notably, everything she has been passed down by the women before her.
